Grandma's Soup Style Sausage Balls

ingredients

  • 6 to 8 raw or herbed Toulouse sausages
  • 2 tablespoons. A tablespoon of toasted flour
  • 2 tablespoons. A teaspoon of grandmother's spices or tourtière spices
  • 1 c. A tablespoon of butter
  • 1 c. Oil soup
  • 2 to 3 medium-sized yellow onions, peeled and cut into quarters
  • Ten small potatoes cut in half
  • 3 to 4 Nantes carrots, peeled and cut into about 1/2-inch rounds
  • 3 cups of beef broth
  • 4 cloves of garlic, peeled and chopped
  • 2 sprigs of fresh rosemary
  • 4 sprigs of fresh thyme
  • A quarter cup of 35% cream (optional)

My grandmother's spices.

  • 10 ml (2 teaspoons) Herbes de Provence
  • 10 ml (2 teaspoons) garlic salt
  • 2.5 ml (1/2 teaspoon) ground cinnamon
  • 2.5 ml (1/2 teaspoon) ground cloves
  • 2.5 ml (1/2 teaspoon) grated or ground nutmeg
  • 2.5 ml (1/2 teaspoon) ground ginger
  • 3 to 4 freshly ground pepper

Place it in a coffee grinder or mortar and grind it slightly until it blends well and brings out the flavours.

to prepare

  1. Remove sausage casings and shape meat into golf ball-sized balls.
  2. In a large dish, mix the flour and spices well.
  3. Roll the meatballs in this mixture to coat them well with this mixture.
  4. In a large Dutch oven, melt butter in oil over medium heat. Salt the onions and sweat for 3 to 4 minutes, add the garlic and sweat for an additional 2 minutes.
  5. Reserve this mixture.
  6. Add a little oil if necessary. Cook the meatballs over medium heat, on all surfaces, for 5 minutes total. Remove and reserve meatballs.
  7. Deglaze with broth. Using a spatula or wooden spoon, scrape the bottom of the pot to release the cooking juices. In the pot, add the meatballs, onion quarters, and here and there small potatoes and carrot slices.
  8. Cover and bake for 20 minutes, turning the meatballs halfway through the cooking process. Remove the lid and cook for another 5 minutes, turning the meatballs halfway through the cooking process. Cream if desired, mix gently and cook for an additional 2 minutes.
  9. Serve immediately.
