Quebec as the new chef at Restaurant Champlain at Château Frontenac

Fairmont Le Château Frontenac has announced the appointment of the new Chef de Champlain, Gabriel Molleur-Langevin, who spent five years as Executive Chef at Mousso in Montreal.

Originally from Quebec, the chef has over 15 years of experience in world-renowned establishments, having worked with Michelin-starred restaurants and in the exceptional establishments of Relais & Châteaux and Grandes Tables du Monde.

Mr. Molleur-Langevin has worked, among others, with Les Maisons Marcon in France, a 3-star Michelin restaurant, at Noma restaurant in Denmark, crowned best restaurant in the world for several years, and at Fäviken in Sweden.

The new chef at Le Champlain firmly believes that Quebec City will be the next gastronomic capital of Canada thanks to the richness of its land and proximity to producers.

“Behind every menu, what is key for me is teamwork. When a dish is prepared in the kitchen with collective cohesion and reflection, it appears and feels even in the dining room. I want to translate all the joy, sharing and passion aspects of cooking into my menus » pointed out.

Fairmont Le Château Frontenac’s culinary director, Frédéric Serre, is delighted with the arrival of his battalion’s head chef.

“For Champlain, we were looking for a chef with a unique background, distinct personality, current knowledge and passion that would allow us to create a personal and unique experience,” he said.

Mr. Molleur-Langevin’s arrival will be marked with a first list this spring under the thumbs up. Developed from local ingredients, this new culinary offering will be revealed at the end of May as a 5- or 8-course Discovery Menu.

Le Champlain was named Best Gourmet Restaurant in 2022 for the North and Central America region by the prestigious World Luxury Awards, in addition to having a wine cellar recognized by the US Wine Spectator magazine.
